Join Whippoorwill Creek Farm for their first lamb and goat butchery class for those who are interested in knowing how to best utilize the whole animal and those wanting to be able to discuss cuts with their customers more fluently.
ABOUT WHIPPOORWILL CREEK FARM:
Whippoorwill Creek Farm is located in Lovilia, Iowa, 1 hour southeast of Des Moines. Owned by John Hogeland and Beth Hoffman, the farm offers pasture-grazed beef and goats. John grew up on the farm, was trained as a chef and butcher, and now raises grass-finished beef and goats. He teaches butchery, cooking and team-building classes. Beth Hoffman has been reporting on food and agriculture for more than twenty-five years and is the author of Bet the Farm: The Dollars and Sense of Growing Food in America, a book about the economics of farming, told through her story of moving to the farm.
WHAT TO EXPECT:
- This class will be a butchery demo and discussion about cuts and how to best use them when cooking.
- Will discuss ways to sell goat and lamb to a wide range of audiences, and different cultural expectations and desires that play into selling these animals.
- Finally, will talk through how to work with your local locker to get the most out of your processing.
- Class will be followed by a complimentary light lunch featuring goat dishes will be provided to give you some ideas on how these meats can shine if cooked properly.
- This class is intended for farmers, ranchers, but is open to the general public.
